Former Orso chef Riad Aamar put New Preston on the culinary map when he came here in 1989 with his now-famous thin crust pizza -- first at Doc's at the tip of Lake Waramaug, then at Oliva, which he opened with his wife Joanna in 1997.
Many Mediterranean specialties like his spinach and goat cheese tart, and his extensive use of fresh Mediterranean herbs, have caused reviewers like Patricia Brooks of the New York Times to call Chef Aamar "talented and fearless...and well worth a detour," adding "It has been ages since I have eaten at a place that lifted my spirits the way Oliva in New Preston did..."
In season, the crowd spills out onto a comfortable covered porch overlooking the Village. Reservations a must on weekends.
